- 165g Wholemeal (wholewheat) flour
- 2 1/4 tsp Baking powder
- 1 tsp Cinnamon
- 85g Frozen blueberries
- 165ml Unsweetened soya milk
- 85g Maple syrup
- 60g Canola or sunflower oil
- 100g Banana (1 pc)
- 1 tsp Cinnamon
- 1 tbsp Brown sugar
Method
Method
- Mash the banana, add the maple syrup, soya milk and oil
- In another bowl, add the flour, baking powder and cinnamon
- Take a spoonful of the flour mixture and add it to the blueberries to prevent them from sinking to the bottom
- Incorporate the dry part into the liquid and mix gently
- Add the blueberries and divide among the 6 paper cups
- Sprinkle with sugar and cinnamon
- Bake for 25 minutes at 180C
