Ingredients

  • 165g Wholemeal (wholewheat) flour
  • 2 1/4 tsp Baking powder
  • 1 tsp Cinnamon
  • 85g Frozen blueberries

  • 165ml Unsweetened soya milk
  • 85g Maple syrup
  • 60g Canola or sunflower oil
  • 100g Banana (1 pc)

  • 1 tsp Cinnamon
  • 1 tbsp Brown sugar

Method

  1. Mash the banana, add the maple syrup, soya milk and oil
  2. In another bowl, add the flour, baking powder and cinnamon
  3. Take a spoonful of the flour mixture and add it to the blueberries to prevent them from sinking to the bottom
  4. Incorporate the dry part into the liquid and mix gently
  5. Add the blueberries and divide among the 6 paper cups
  6. Sprinkle with sugar and cinnamon
  7. Bake for 25 minutes at 180C
