For vegetables:
- 750ml Water
- 2 tbsp Canola oil
- 500g Daikon
- 1 Onion
- 1 Carrot
- 1/2 Sweet potato
- 40g Frozen edamame
- 150g Soya mince
Seasoning:
- 1 tbsp Miso
- 1 tbsp Soy sauce
- 2 Squares of mild S&B Tasty Curry
Method
Method
- Peel all the vegetables
- Finely chop the onion, chop the carrot and dice the daikon
- Grate the sweet potato with the finest part of the grater
- Sauté the onion in oil, then add the rest of the vegetables
- Cover with the 750 ml water and cook until the vegetables are soft
- Add the green soya (edamame) and soya mince (mine is frozen)
- Cook for a further 10 minutes
- Dissolve the curry cubes and miso in some hot stock (removed from the pan)
- Add the soy sauce and cook for a further 5 minutes
- Serve with steamed short-grain rice
