Ingredients

For vegetables:

  • 750ml Water
  • 2 tbsp Canola oil
  • 500g Daikon
  • 1 Onion
  • 1 Carrot
  • 1/2 Sweet potato
  • 40g Frozen edamame
  • 150g Soya mince

Seasoning:

  • 1 tbsp Miso
  • 1 tbsp Soy sauce
  • 2 Squares of mild S&B Tasty Curry

Method

  1. Peel all the vegetables
  2. Finely chop the onion, chop the carrot and dice the daikon
  3. Grate the sweet potato with the finest part of the grater
  4. Sauté the onion in oil, then add the rest of the vegetables
  5. Cover with the 750 ml water and cook until the vegetables are soft
  6. Add the green soya (edamame) and soya mince (mine is frozen)
  7. Cook for a further 10 minutes
  8. Dissolve the curry cubes and miso in some hot stock (removed from the pan)
  9. Add the soy sauce and cook for a further 5 minutes
  10. Serve with steamed short-grain rice
