Soup base:
- 100g Red lentils
- 500ml Water
Spices and additional ingredients:
- 2 tbsp Sunflower or canola oil
- 1 Large potato or 2 small ones
- 1 Onion
- 1/2 Carrot
- 1 Garlic clove
- 1 Piece of ginger
- 1 tsp Salt
- 1/2 tsp Turmeric powder
- 1/2 tsp Cumin seeds
- 1/2 tsp Black mustard seeds
- 1 /4 tsp Curry powder or Garam masala
- Fresh coriander to decorate
Method
Method
- Wash the lentils under running water until the water comes out relatively clear
- Add the oil to the pressure cooker, sauté the onion until it is translucent
- Then add the garlic, ginger, cumin and mustard seeds
- Continue by adding the powdered spices: turmeric and curry powder (or Garam Masala if you have it)
- Add carrot and potatoes cut into pieces
- Incorporate the lentils and cover with half a liter of boiling water
- Close the pressure cooker and proceed with cooking, it will take 5/10 minutes from when you hear the cooker whistling
- Once the valve is finished and the valve has dropped, you can open the pot
- Check the consistency of the soup and add the salt
- Personally, I lightly crush the lentils with a spoon to make it creamier
- Serve with rice and fresh coriander

Notes
Red lentils do not require soaking, however I recommend washing them thoroughly under running water before cooking to eliminate any impurities that may have accumulated on the surface
Boiling water isn't mandatory, but if you have a kettle, it can help speed up the cooking time by several minutes
