Pasta with cream of broccoli and smoked tofu

  • 300g Broccoli
  • 2 Garlic cloves
  • 150g Smoked tofu
  • 2 tbsp Extra virgin olive oil

  • 200g Short pasta
  • 240ml Unsweetened soya milk
  • 2 tbsp Nutritional yeast
  • 1 tbsp Miso


  1. Wash the broccoli, remove the outer part of the stems and cut them into julienne
  2. Cut the broccoli tops into fairly thin pieces
  3. Also cut the tofu into small cubes
  4. Bring the water to a boil in a saucepan and add 1 teaspoon of salt
  5. Cook the broccoli for 5 minutes
  6. Meanwhile, in a pan, add the oil, the minced garlic and broccoli stems
  7. Just before draining the broccoli, add the tofu to the pan and brown it together with the other ingredients
  8. With a cobweb strainer, remove the broccoli from the water without throwing it away
  9. Add half to the pan and the rest to a bowl (or blender bowl if you have one)
  10. Blend the broccoli with the soy milk, yeast and miso. Then add to the pan
  11. Once the pasta is cooked, drain it without throwing away the water and finish cooking in the pan with the broccoli cream*
  12. To finish cooking, add a little of the pasta cooking water and adjust the seasoning
  13. Serve with black pepper


Drain the pasta a few minutes beforehand, so that it doesn’t overcook once you put it back in the pan
