Pasta with cream of broccoli and smoked tofu

- 300g Broccoli
- 2 Garlic cloves
- 150g Smoked tofu
- 2 tbsp Extra virgin olive oil
- 200g Short pasta
- 240ml Unsweetened soya milk
- 2 tbsp Nutritional yeast
- 1 tbsp Miso
Method
Method
- Wash the broccoli, remove the outer part of the stems and cut them into julienne
- Cut the broccoli tops into fairly thin pieces
- Also cut the tofu into small cubes
- Bring the water to a boil in a saucepan and add 1 teaspoon of salt
- Cook the broccoli for 5 minutes
- Meanwhile, in a pan, add the oil, the minced garlic and broccoli stems
- Just before draining the broccoli, add the tofu to the pan and brown it together with the other ingredients
- With a cobweb strainer, remove the broccoli from the water without throwing it away
- Add half to the pan and the rest to a bowl (or blender bowl if you have one)
- Blend the broccoli with the soy milk, yeast and miso. Then add to the pan
- Once the pasta is cooked, drain it without throwing away the water and finish cooking in the pan with the broccoli cream*
- To finish cooking, add a little of the pasta cooking water and adjust the seasoning
- Serve with black pepper

Drain the pasta a few minutes beforehand, so that it doesn’t overcook once you put it back in the pan
